William Bounds Mill WB 1 Pepper

I had this pepper mill--for at least 20 years. Alas, however, the other day it hit the ceramic kitchen floor with enough force to grow a crack up the side and chip the bottom. So, I mounted a Saturday-morning shopping search (of approximately three hours, to three shopping centers and 8 stores) in the nearby bigger town to locate a suitable replacement. Well, no luck. Only very attractive mills with the knob-turning design (as opposed to this one's key) were available. On arriving home I noted the manufacturer on the damaged mill, and discovered on Amazon the very same mill. It arrived today; appears to have the addition of some modern materials to its workings--an improvement, it is to be hoped. This mill is great for cooking (you can crank a quarter teaspoon of pepper in no time as needed; I haven't seen another mill that could do that) and looks perky and businesslike on the table. I am quite pleased.

Little Coffee Shop Kabul ebook

This story about a little coffee shop and it's people in a city in modern day Afghanistan gave me a personal look at what it would mean to live in a place such as this. Imagine living in a place where on a daily basis a bomb may go off and you may loose a friend or family member. Where business owners face problems such as bombs going off near them, then loosing power, then trying to work out ways to protect their property. On top of all that there are the social issues, the strict religious beliefs and the seemingly powerless situation that women are in. The Fantastic part about all of this, is that this little coffee shop and all the people in it have their own stories and as each one unfolds, each character shows such strengths, imaginations and character. I loved it.

The best book I've ever read!, September 26, 2003

A Kid's Review

Once I started reading "Daughter of the Loom", I couldn't put it down. I thought Tracie Peterson and Judith Miller were great, mixing romance and history into the book. I was never one for religion but after reading this book it all made more sense. The book had a great plot making it a real page turner. Lily Armbruster was a great character with strong beliefs and I liked that. I couldn't help going on the internet to see if Peterson and Miller had written any other books together. Once I found out it was part of a series I was thrilled and had to read the second, I'm still waiting for the 3rd one to come out. I hope Peterson and Miller write together again, I'd definatly read their books. The book was outstanding and exiting and in a way educating. I will look forward to reading more books by both authors.

It is easy to get a bit snobby when it comes to pepper mills, since there are some really good looking highly functional ones available. If you want to spend twenty or thirty dollars more than this one costs, there are plenty of options. My favorite is Cole and Mason H59401G Derwent Precision Gourmet Pepper Mill. It's high tech and works perfectly, and it looks stylish.

This one is plastic and inexpensive looking and yet, it does what a pepper mill should. You can adjust the coarseness of the pepper easily. I find that you can indeed get exactly the grind you want from the finest to the most course. But the really good feature of this is that it holds an entire bottle of peppercorns. Also, and this is extra helpful, the grinder is on the top, so you don't get flakes of pepper on the table underneath this.

Having a pepper mill is fast becoming a necessity, for chefs and those of us who simply can appreciate the fact that freshly ground pepper simply tastes better on food than pre-ground. For salads, having a fairly course grade of ground pepper really can enhance the greens, and I love my Ceasar Salads. I either want freshly ground pepper on them, or none at all.

I use this one to grind my flaxseeds before adding them to my morning oatmeal, and don't feel that I need an expensive pepper mill for that job. I simply grind the flax onto the oatmeal. This works great for that. I keep this in the fridge to keep the flaxseeds fresh.

This is an inexpensive version of a pepper mill, but it grinds the pepper, or flax in my case, and does it easily. I actually think it looks pretty cute, at least for the kitchen, if not for the dining room. If you don't need a fancy pepper mill, or won't be using one often enough to justify buying a more expensive one, this one is perfectly fine. I can't promise it will last for years, but with careful handling, it might. There is a ten year warranty on the mechanism. I can recommend this.

My kids have multiple food allergies, so I've been experimenting with different flours. Most everything labeled gluten free has corn (either cornstarch, corn meal or xanthan gum from corn). Millet flour has a nice taste but gritty texture. Muffins made with it are like bricks once they cool. Rice flour is so gritty I use it to replace cornmeal on my fried okra. So I've been on a search for a better baking flour. I've been pleased with the buckwheat. It does have more flavor to it than something like millet. When I used 100% buckwheat for Christmas spritz cookies (like shortbread), the kids said the cookies were a little funky, but they still ate them. Then I tried half millet flour and half buckwheat. Total success. The buckwheat gives a texture more like wheat, and the millet keeps the flavor pretty neutral.

If you need a gluten free, corn free flour, this is what you want to try. Tips: use guar gum (Barry farm, on Amazon) instead of xantham if you can't have corn. I use 1/2 tsp for a batch of muffins/cake, a little more for cookies so they don't break too easily.

The arrowhead mills buckwheat flour does have a dark color. I got weird looks when I served up a gray coffee cake with buckwheat and no millet. Taste was great. Color was pretty scary. My buckwheat hot cereal (use to make grits) is a nice yellow, so maybe there is some husk or something in the whole grain flour that gives the color. If you make everything chocolate flavor it solves the problem. Good excuse to add cocoa (which also has a nice texture when baking gluten free, and tastes better than potato starch).
